Seonbi Gin
A 48% distilled soju made from gin distillate.

About this drink
For a soft sweetness, it uses 100% glutinous rice rather than non-glutinous rice; following a Joseon-era method, the glutinous rice is ground into flour and made into a thick paste (beombeok) for the additional mash.

The brewer
Tokki Soju is a soju brand created by Brandon Hill in Brooklyn, New York, in 2016. Its name comes from 2011, the Year of the Rabbit (tokki), when the founder learned to make soju in Korea. In 2020 it completed a distillery in Chungju, North Chungcheong, set up an agricultural corporation and began brewing in Korea. It ferments glutinous rice with nuruk and bottles the spirit without filtering out its fatty acid esters.
