The brewer
Ominara is a winery and distillery at the entrance to Mungyeong Saejae in North Gyeongsang, on the site of an old inn (jumak). CEO Lee Jong-gi, a former whisky master blender, makes wine from omija (five-flavor berries), a Mungyeong specialty, then distills that wine again into Goundal (고운달), a 52% ABV brandy. Omija is a demanding fruit — its first fermentation alone takes more than a year — and the winery works with it through 18 months of aging in the bottle, a hand-hammered bangjja copper still, and maturation in oak barrels and white-porcelain (baekja) jars.
